Ingredients

Cake

  • 2 cups flour
  • 1 cup cornstarch
  • 1 tsp baking powder

Cream Cheese Frosting

Mango Curd

  • 3 ripe mangoes
  • 1/2 cup sugar
  • 1/4 cup fresh lemon juice

  • 3 egg yolks
  • 1/4 cup unsalted butter

Instructions

Cake

  1. Preheat the oven to 350°F (175°C).
  2. Lightly butter three 8-inch cake pans and dust with flour, tapping out any excess.
  3. In a medium bowl, whisk together the flour, cornstarch, baking powder, baking soda, salt, and ground nutmeg.
  4. In a large bowl, using an electric mixer, beat together the unsalted butter and egg yolks until well blended.
  5. Gradually beat in the sugar, then beat in the eggs one at a time.
  6. Beat in the sour cream and vanilla extract.
  7. Gradually beat in the dry ingredients, alternating with the mashed bananas.
  8. Divide the batter evenly between the prepared cake pans.
  9. Bake the cakes for about 20 minutes, or until a tester inserted into the center comes out clean.
  10. Allow the cakes to cool in the pans on wire racks for 10 minutes, then turn them out onto the racks to cool completely.

Cream Cheese Frosting

  5. Set the metal bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.
  6. Whisk the puree continuously until thickened and a thermometer registers 170°F (77°C), about 10 minutes.
  7. Remove the bowl from the heat and whisk in the unsalted butter, one piece at a time, until fully incorporated.
  8. Cover the mango curd and refrigerate it overnight to allow it to set.

Assembly

  1. Place one of the cooled cake layers on a serving platter.
  2. Spread 3/4 cup of the cream cheese frosting over the top of the cake layer.
  3. Spread half of the mango curd over the frosting.
  4. Top with the second cake layer and spread another 3/4 cup of frosting over it, followed by the remaining mango curd.
  5. Place the third cake layer on top.
  6. Spread the remaining frosting around the sides and over the top of the cake.
  7. Pipe a decorative border of frosting around the top edge of the cake.
  8. Garnish with mango slices and a sprig of mint.
