Mango, Papaya, and Nutella® Tacos

Nutella® 90g

Instructions:

  1. Prepare the Fruit:
    Start by peeling the mango. Cut it into slices and remove the central pit. Dice the mango flesh into small cubes. Then, peel the papaya, cut it in half, and scoop out the seeds. Similarly, cut the papaya into small cubes. Set both fruits aside.

  2. Make the Syrup:
    In a small saucepan, combine 30g of water with 20g of sugar. Heat the mixture over moderate heat, stirring occasionally, until the sugar dissolves completely. Once the sugar has dissolved, add the mango cubes and caramelize the fruit for 3-4 minutes. Ensure the syrup doesn’t evaporate entirely, then remove the saucepan from the heat. Add a pinch of white pepper to enhance the flavor.

  3. Prepare the Tortillas:
    Using a round cutter (10 cm in diameter), cut the tortillas into 6 discs. Set them aside.

  4. Make the Second Syrup:
    In a separate saucepan, combine 10g of water with 10g of sugar. Heat over moderate heat until the sugar dissolves.

  5. Shape the Tortillas:
    Brush one side of each tortilla disc with the syrup you just prepared. Place each syrup-brushed tortilla on an inverted muffin tin, folding them in half and fitting them into the spaces between the muffin cups. The syrup-coated side should face inward. Place the muffin tin in a preheated convection oven at 200°C (390°F) and bake for 8 minutes, or until the tortillas are crisp and golden.

  6. Assemble the Tacos:
    Once the tortillas are baked, remove them from the oven and let them cool. Once cooled, fill each taco shell with the caramelized tropical fruit mixture. Then, transfer Nutella® into a piping bag fitted with a 9mm smooth tip. Pipe generous dollops of Nutella® on top of the fruit.

  7. Garnish and Serve:
    Garnish with fresh mint leaves for a burst of freshness. Serve and enjoy these delicious, tropical-inspired dessert tacos!
