Instructions

Step 1: Prepare the Savoiardi (Ladyfingers)

  1. Preheat the oven to 180Β°C (350Β°F).
  2. Separate the egg yolks and whites. Beat the egg yolks slightly and set aside.
  3. In a separate bowl, beat the egg whites with the caster sugar until firm peaks are formed, using a hand mixer or stand mixer.
  4. Gradually add the egg yolks into the beaten egg whites, continuing to beat the mixture until smooth.
  5. Sift in the all-purpose flour and gently fold it into the mixture to avoid deflating the egg whites.
  6. Fill a piping bag with the batter and pipe 3 cm long lines onto a parchment-lined baking sheet. Ensure that each strip is about 1 cm in width and spaced 3 cm apart.
  7. Bake the savoiardi for 15-18 minutes or until golden brown. Once baked, cool them completely on a wire rack, then store them in an airtight container until ready to use.

Step 2: Make the Mango Syrup

  1. In a saucepan, combine the mango pulp, water, and caster sugar.
  2. Bring the mixture to a boil, then reduce the heat and simmer until the syrup thickens and reduces to about 1 cup.

  1. Take the cooled savoiardi and dip each one into the mango syrup briefly, tapping off any excess syrup.
  2. Arrange the soaked savoiardi vertically in a serving dish or plate, creating the first layer.
  3. Spread approximately 1/2 cup of the filling mixture over the first layer of savoiardi.
  4. Add another layer of soaked savoiardi, followed by another layer of the filling. Continue layering until the dish is filled, finishing with a layer of filling on top.
