Methi Seeds (Fenugreek) 1/4 teaspoon
Dry Red Chilli 2 (cut into halves)
Curry Leaves 1 sprig

Instructions

  1. Prepare the Mangoes: Begin by heating a heavy-bottomed pan with 2 cups of water. Add the ripe mangoes and sliced green chillies, then cover the pan and cook over low flame for about 10 to 15 minutes. Optionally, you can squeeze some pulp from the mangoes to enhance the gravy.

  2. Make the Masala Paste: While the mangoes are simmering, prepare the masala paste. In a mixer jar, combine the grated coconut, cumin seeds, turmeric powder, and red chilli powder. Add 1/4 cup of warm water and blend until you achieve a smooth paste.

  3. Combine Ingredients: Once the mangoes are tender, incorporate the ground masala paste into the pan. Continue cooking the Mambazha Puliserry over low flame for an additional 5 to 7 minutes, allowing the flavors to meld.

  4. Add Curd: Gently fold in the whisked curd and bring the mixture to a brisk boil. Once boiling, turn off the heat and taste for salt and spice, adjusting as necessary.

  5. Prepare the Tempering: In a separate tadka pan, heat the coconut oil over medium heat. Add the mustard seeds and methi seeds, allowing them to crackle. Next, introduce the halved dry red chillies and curry leaves, stir-frying for a few seconds until fragrant.

  6. Serve: Pour the hot tempering over the Mambazha Puliserry, then transfer it to a serving bowl. Serve this delightful Kerala special with hot steamed rice and crispy Elai Vadam for a truly satisfying weekday meal.
