Ingredients:

  • For the Crust:

    • 2 cups flour
    • 2/3 cup margarine
    • 1/2 cup powdered sugar
  • For the Filling:

    • 2 packages (8 oz each) cream cheese, softened
    • 1/2 cup sugar
    • 2 eggs
    • 2/3 cup crushed pineapple, drained (reserve juice)
  • For the Topping:

    • 2 tablespoons flour
    • 1/4 cup sugar
    • 1 cup reserved pineapple juice
    • 2/3 cup crushed pineapple, drained
    • 1 cup whipping cream

Instructions:

For the Crust:

  1. In a medium bowl, combine flour, margarine, and powdered sugar.
  2. Mix the ingredients with a fork until crumbly.
  3. Press the mixture firmly and evenly into the bottom of an ungreased rectangular pan (13×9 inches).
  4. Bake the crust at 350°F for 15 to 20 minutes or until set.

For the Filling:

  1. In another medium bowl, beat the softened cream cheese until smooth and fluffy.
  2. Gradually beat in 1/2 cup of sugar and the eggs until well combined.
  3. Stir in the drained crushed pineapple (2/3 cup).
  4. Pour the cream cheese mixture over the hot crust.

For the Topping:

  1. In a 2-quart saucepan, mix flour and 1/4 cup of sugar.
  2. Stir in 1 cup of reserved pineapple juice.
  3. Heat the mixture to boiling over medium heat, stirring constantly.
  4. Boil and stir for 1 minute, then remove from heat.
  5. Fold in the drained crushed pineapple (2/3 cup) and let it cool completely.
  6. In a chilled bowl, beat the whipping cream until stiff peaks form.
  7. Gently fold the whipped cream into the cooled pineapple mixture.
  8. Carefully spread the topping over the cooled dessert.
  9. Cover loosely and refrigerate until firm, about 4 hours.
  10. Once set, cut into about 3-inch squares and serve chilled.
