Ingredients

  • 1 whole chicken, cut into pieces
  • 1/2 cup flour
  • 1/3 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup pineapple syrup
  • 1 cup water
  • 1 can pineapple slices, drained
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons cider vinegar
  • 3/4 cup soy sauce
  • 1 teaspoon ground ginger
  • 1 bouillon cube
  • 1 green pepper, sliced

3 Heat oil in a large frying pan over medium-high heat. Brown the chicken on all sides until golden brown.

5 Sprinkle the chicken pieces with salt and pepper.
6 Prepare the sauce: In a 2-cup measuring cup, combine the pineapple syrup and water to make 1 1/4 cups. Mix in the cornstarch until dissolved.
7 In a medium saucepan, combine the sugar, dissolved cornstarch mixture, cider vinegar, soy sauce, ginger, and bouillon cube. Bring the mixture to a boil, stirring constantly, and let it boil for 2 minutes.
8 Pour the prepared sauce over the chicken pieces in the roasting pan.
9 Bake the chicken uncovered in the preheated oven for 30 minutes.
10 After 30 minutes, add the pineapple slices and green pepper slices to the roasting pan.
11 Continue baking for an additional 30 minutes, or until the chicken is cooked through and the pineapple and peppers are tender.
