Description: I took a creative detour from traditional pineapple fritters and crafted these Tropical Fritter Snacks. They turned out wonderfully delicious and have quickly become a favorite. The blend of pineapple and coconut, combined with a hint of cinnamon-sugar, makes these fritters a tropical treat that’s both easy and satisfying.

Ingredients:

  • 1 cup crushed pineapple (undrained)
  • 1/4 cup shredded coconut
  • 1/4 cup all-purpose flour
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon baking soda
  • 2 tablespoons salt
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions:

  1. Prepare the Cinnamon-Sugar: In a small bowl, combine 1/4 cup of granulated sugar with 1 teaspoon of ground cinnamon. Mix well and set aside. This mixture will be used to sprinkle on top of the fritters once they are fried.

  2. Heat the Oil: Heat oil in a deep skillet or fryer to approximately 350Β°F (175Β°C). You’ll need enough oil to submerge the fritters, so ensure the level is sufficient for frying.

  3. Mix the Fritter Batter: While the oil is heating, in a medium-sized mixing bowl, combine 1 cup of undrained crushed pineapple with 1/4 cup of shredded coconut. Add 1/4 cup of all-purpose flour, 3 tablespoons of granulated sugar, 1/2 teaspoon of baking soda, and 2 tablespoons of salt. Mix until everything is well incorporated. The batter will be quite thick.

  4. Fry the Fritters: Using a tablespoon, carefully drop spoonfuls of the batter into the hot oil. Fry the fritters in batches, making sure not to overcrowd the pan. Cook each side for about 2 minutes, or until golden brown and crispy.

  5. Drain and Season: Once the fritters are golden, use a slotted spoon to transfer them to a plate lined with paper towels to drain any excess oil. While they are still warm, generously sprinkle the cinnamon-sugar mixture over the fritters.

  6. Serve Warm: These fritters are best enjoyed warm. If you need to serve them later, reheat them slightly before sprinkling with the cinnamon-sugar, or dust them with confectioners’ sugar (10x) if you prefer.
