Ingredients:

  • 3 boneless skinless chicken breasts
  • 2 1/2 tsp salt
  • 2 1/2 tsp pepper
  • 2 red bell peppers, sliced
  • 2 green bell peppers, sliced

  • 1 can pineapple chunks
  • 1 cup light brown sugar
  • 1 cup cider vinegar
  • 1/4 cup cornstarch
  • 1/4 cup cold water

Instructions:

1 In a small bowl, combine the pineapple juice, light brown sugar, cider vinegar, and chicken stock. Set aside.
2 Season the chicken breasts with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat. Sauté the chicken until it’s no longer pink and begins to brown. Transfer the cooked chicken to a clean plate or bowl.
3 In the same skillet, add the sliced red bell peppers, green bell peppers, and onions. Sauté for 1-2 minutes until they start to soften.
4 Add the pineapple chunks to the skillet and cook for an additional minute.
5 Pour the pineapple juice mixture into the skillet with the vegetables. Allow the sauce to simmer until it has reduced by about one-third.
6 In a separate bowl, mix the cornstarch with cold water to create a slurry. Slowly pour the cornstarch slurry into the skillet, stirring continuously until the sauce thickens to your desired consistency.
7 Return the cooked chicken to the skillet, making sure it’s coated evenly with the sweet and sour sauce. Allow the chicken to simmer in the sauce for an additional 5 minutes, ensuring it’s heated through.
