Tropical Salmon Poke Bowl with Avocado and Apple

Ingredients:

Sushi rice 160g
Water 250g
Fine salt To taste
Black sesame seeds 1 teaspoon
Soy sauce 2 tablespoons
Salmon fillet 200g
Sesame oil 1 tablespoon
Lime juice ½ lime
Avocado 1
Corn oil (or vegetable oil) 1 tablespoon
Granny Smith apple 1

Instructions:

  1. Cook the Rice: Start by rinsing the sushi rice under cold water in a fine mesh sieve until the water runs clear. Transfer the rice into a pot, add the specified amount of water, and season with a pinch of salt. Bring it to a boil. Once boiling, cover the pot with a lid and wrap it in a clean kitchen towel. Reduce the heat to the lowest setting and let it cook for 10 minutes. Avoid stirring or lifting the lid during this time, as it will ensure a dry, perfectly cooked rice at the end.

  2. Rest the Rice: After 10 minutes of cooking, remove the pot from the heat, leaving the lid on, and let the rice rest for another 5 minutes. This will allow the steam to finish cooking the rice and make it fluffy.

  3. Prepare the Salmon: While the rice is cooking, take the salmon fillet (skin removed) and cut it into small cubes. Place the cubes into a bowl and season with sesame oil, fine salt, and lime juice. Gently toss to coat the salmon evenly in the marinade.

  4. Prepare the Avocado and Apple: Cut the avocado in half, remove the pit, and scoop out the flesh. Dice the avocado into small cubes and place it in a separate bowl. Drizzle with lime juice and toss gently to prevent browning. Next, core and slice the Granny Smith apple into small cubes, and set aside.

  5. Assemble the Poke Bowls: Now it’s time to assemble the bowls. Divide the cooked sushi rice among four bowls. Arrange the marinated salmon, diced avocado, and apple cubes on top of the rice. Sprinkle with black sesame seeds for an added crunch and flavor. Drizzle with soy sauce and corn oil to enhance the taste.

  6. Serve and Enjoy: Serve the poke bowls immediately, garnished with extra lime wedges if desired for an extra zesty kick.
