Shrimp Ceviche with Mango and Raspberry

Instructions:

  1. Prepare the Shrimp
    Begin by preparing the shrimp: peel off the heads and shells, then slice open the backs to remove the intestines. Carefully slice each shrimp lengthwise into two halves, ensuring they remain tender and beautiful. Set them aside for the moment.

  2. Prepare the Mango
    Peel the mango, cutting away the pit. Slice the larger pieces of mango in half, ensuring they are bite-sized and ready to pair with the shrimp. Set these slices aside, keeping them fresh.

  3. Make the Lime-Ginger Marinade
    In a narrow and deep container, pour in the lime juice. Add the fresh ginger, cutting it into small pieces. Then, pour in the extra virgin olive oil. Use an immersion blender to blend this mixture into a smooth, aromatic marinade.
