Instructions

  1. Prepare the Porcini Mushrooms:
    Start by cleaning the porcini mushrooms thoroughly. Once cleaned, slice them horizontally into thin pieces. Set them aside.

  2. Sauté the Mushrooms:
    In a non-stick pan, pour 3 tablespoons of extra virgin olive oil. Add the garlic cloves, lightly crushed, and sauté them until golden. Once the garlic has infused the oil, add the sliced porcini mushrooms and cook them on moderate heat for about 7 to 8 minutes, stirring occasionally.

  3. Season the Mushrooms:
    Once the mushrooms are tender, season with fine salt and black pepper to taste. Mix well to combine and then turn off the heat. At this point, grate a few shavings of black truffle over the mushrooms for an added touch of luxury. Cover the pan with a lid and set it aside while you prepare the beef.

  4. Prepare the Beef Tenderloin:
    Take each piece of beef tenderloin and tie it with kitchen twine to help maintain its shape during cooking. Heat a little olive oil in a non-stick pan over high heat. Place the beef tenderloin in the pan and sear it on each side for about 5 minutes, until it’s nicely browned.

  5. Season the Beef:
    Halfway through the cooking process, sprinkle the beef with a pinch of salt. Continue to cook until the meat reaches your desired level of doneness.

  6. Final Touches:
    Once the beef tenderloin is cooked to perfection, remove it from the heat. Grate a little more black truffle on top for that signature earthy flavor.

  7. Plate the Dish:
    To serve, arrange the beef tenderloin on each plate and spoon the porcini and truffle mixture over the top. Garnish with freshly chopped parsley and serve alongside some lamb’s lettuce (songino) for a fresh contrast.
