Tuna Fillets on Chickpea and Red Onion Velvet Soup

Instructions

  1. Prepare the Chickpea Cream:

Pour in enough water to cover the chickpeas. Allow the mixture to cook gently for a few minutes to infuse the flavors.

  2. Cook the Red Onions:
    While the chickpeas are cooking, peel and thinly slice the red onions. In a separate pan, heat 10g of olive oil over medium-high heat. Add the sliced onions and sauté for about 5 minutes, or until they are golden brown and crispy. Set them aside once they reach the desired texture.
