Begin by preparing the tomatoes. Slice the tops off of the ripe tomatoes, and sprinkle a little salt over them. Place them upside down on a plate or, even better, on a wire rack to allow excess moisture to drain. Let them sit for a few minutes.

Meanwhile, cook the two eggs by boiling them until they are hard. Once done, place them under cold running water to cool. Peel the eggs and chop them into small pieces.

Drain the canned tuna by using a fine sieve or colander to remove any excess oil. Place the tuna in a bowl and flake it using a fork. Add the anchovies, mashing them together with the tuna to combine well.

In a separate bowl, begin preparing the mayonnaise. Start by adding the white wine vinegar, then slowly drizzle in the vegetable oil while whisking continuously. This process should be done very slowly to ensure the mayonnaise emulsifies properly. Once the mayo has thickened, add the lemon juice and mix well.

To the mayonnaise, add the chopped capers, anchovies, and a pinch of salt and pepper. Stir until all the ingredients are fully incorporated, creating a smooth, flavorful mixture.

Now, carefully fill a piping bag (disposable is recommended) with the prepared tuna and mayonnaise mixture. Using the piping bag, neatly stuff the drained tomatoes with the creamy filling. The piping bag will also allow you to create a decorative effect as you fill each tomato.
