Instructions:

  1. Bring the water and olive oil to a boil.

    In a large pot, combine the water and olive oil. Place it over medium-high heat and bring it to a rolling boil. This will create a flavorful base for your soup.

    Once the water is boiling, slowly sprinkle in the tarhana while stirring constantly to prevent clumping. Continue stirring for about 20 minutes, allowing the tarhana to cook and thicken the soup to a creamy consistency.

  3. Add a little tomato paste and salt to taste.

    After the tarhana has cooked and the soup has thickened, add the tomato paste to enhance the flavor and give the soup a rich, tomatoey depth. Season with salt to taste, adjusting the amount according to your preferences.

  4. Serve with grated romano cheese and a little bit of butter in each bowl.
