Turmeric-Coconut Golden Chicken

Golden Turmeric Chicken (Ayam Bumbu Kuning)

Ingredients:

  • 500 grams chicken wings, cut into pieces
  • 100 grams grated coconut
  • 6 shallots
  • 4 cloves garlic
  • 1 tsp turmeric powder or 2 cm fresh turmeric
  • Salt, to taste
  • Pepper, to taste
  • 1/2 tsp nutmeg powder
  • 300 ml water
  • Cooking oil
  • 2 stalks lemongrass, bruised
  • 2 bay leaves
  • 2 cm galangal, bruised

Instructions:

  1. Prepare the Spice Paste: Grind shallots, garlic, salt, pepper, and turmeric (if using fresh turmeric) into a smooth paste.

  2. Sauté the Spice Paste: Heat some cooking oil in a pan. Sauté the ground spice paste with bay leaves, lemongrass, and bruised galangal until fragrant.

  3. Cook the Chicken: Add the chicken pieces to the pan, stirring until they change color and are coated with the spice mixture.

  4. Add Coconut and Water: Stir in the grated coconut until well combined with the chicken. Pour in the water. Cook until the liquid reduces and thickens slightly. Adjust seasoning as needed.

  5. Serve: Golden Turmeric Chicken is ready to be served! It can also be fried to make a delicious variation known as Serundeng Fried Chicken. Enjoy your meal! 😊
