Golden Turmeric Chicken (Ayam Bumbu Kuning)
Ingredients:
- 500 grams chicken wings, cut into pieces
- 100 grams grated coconut
- 6 shallots
- 4 cloves garlic
- 1 tsp turmeric powder or 2 cm fresh turmeric
- Salt, to taste
- Pepper, to taste
- 1/2 tsp nutmeg powder
- 300 ml water
- Cooking oil
- 2 stalks lemongrass, bruised
- 2 bay leaves
- 2 cm galangal, bruised

Prepare the Spice Paste: Grind shallots, garlic, salt, pepper, and turmeric (if using fresh turmeric) into a smooth paste.

Sauté the Spice Paste: Heat some cooking oil in a pan. Sauté the ground spice paste with bay leaves, lemongrass, and bruised galangal until fragrant.

Cook the Chicken: Add the chicken pieces to the pan, stirring until they change color and are coated with the spice mixture.

Add Coconut and Water: Stir in the grated coconut until well combined with the chicken. Pour in the water. Cook until the liquid reduces and thickens slightly. Adjust seasoning as needed.
