Golden Turmeric Mackerel (Ikan Kembung Bumbu Kuning)
Ingredients:
- 2 mackerel fish
- Spice Paste:
- 5 shallots
- 3 cloves of garlic
- 10 orange Thai chili peppers
- 3 candlenuts
- Turmeric
- Ginger
- Salt
- Seasoning powder
- Sliced Ingredients:
- Red curly chili peppers
- Tomato
- Galangal
- Salam leaves (Indonesian bay leaves)
- Lemongrass
- Brown sugar
- Cooking oil
Instructions:

Fry the mackerel until slightly dry. Set aside.

Grind together shallots, garlic, Thai chili peppers, candlenuts, turmeric, ginger, salt, and seasoning powder until smooth.

Slice the red curly chili peppers, tomato, and galangal. Crush the lemongrass.

Heat cooking oil in a pan. Add the ground spice paste and stir until fragrant. Add salam leaves, lemongrass, sliced tomato, red curly chili peppers, and crushed galangal.

Pour in a little water. Season with seasoning powder and brown sugar.

Add the fried mackerel into the spice mixture. Cook until the fish absorbs the flavors of the spices.
