Instructions

  1. Soak the Rice: Begin by soaking the brown rice in water for about 1 hour to soften it.

  2. Prepare the Batter: After soaking, drain the rice and transfer it to a blender. Add the puffed rice, chopped bananas, jaggery, fresh coconut, and a pinch of salt. Blend all the ingredients with ½ cup of water until you achieve a thick batter.

  3. Heat the Paniyaram Pan: Place a paniyaram pan on medium heat and add a little sunflower oil or ghee to each depression.

  4. Cook the Paniyarams: Pour some of the prepared batter into each depression, filling them about halfway. Cook until the bottom turns light brown, then carefully flip each paniyaram using a skewer or fork. Add more oil or ghee as needed while cooking.

  5. Serve Hot: Once both sides are golden brown and cooked through, transfer the paniyarams to a plate. Serve them hot, ideally paired with Adrak Chai (Indian Style Ginger Tea) and Ribbon Pakoda (a crunchy South Indian snack).
