Instructions

  1. Preparation of Rice:

    • Begin by washing and soaking the red parboiled rice in plenty of water overnight. This step helps soften the rice, making it easier to grind and shape into the sevai.
  2. Grinding the Rice Mixture:

    • The next morning, drain the water from the soaked rice. In a mixer grinder, add the drained rice along with the grated fresh coconut and salt. Add water gradually as needed to help grind the mixture into a smooth yet slightly thick dough. The consistency of the dough should be firm enough to hold its shape when pressed.
  3. Kneading the Dough:

    • Once the dough is well-ground, transfer it to a bowl and knead it until it becomes smooth and pliable. Divide the dough into four equal portions for easier handling during steaming.
  4. Preparing the Steamer:

    • Heat water in a steamer and bring it to a rolling boil. Before proceeding with steaming, grease the steamer plate lightly with some oil to prevent sticking.
  5. Shaping the Sevai:

    • Using a chakli or murruku maker, attach the sevai mould. Place one portion of the dough in the maker and press it gently to form small roundels directly onto the greased steamer plate.
    • Once the plate is filled with sevai, carefully place it inside the steamer and steam the rice noodles for about 10 minutes.
  6. Steaming the Remaining Sevai:

    • After 10 minutes, remove the first batch of sevai from the steamer and repeat the process with the remaining dough portions until all the sevai is steamed.
  7. Final Touch:

    • Garnish the steamed sevai with a little grated fresh coconut on top for added texture and flavor.
