Ingredients:

Lean ground beef 12 oz
Tomato paste 2 tbsp
Dry white wine 1/2 cup
Nutmeg 1/2 tsp
Milk 2 1/2 cups
Bay leaf 1
Butter 2 tbsp
Flour 1/2 cup
Mozzarella cheese 8 oz
Parmesan cheese 8 oz
Lasagna noodles 12 noodles

Instructions:

  1. Prepare the Meat Sauce:

    • In a saucepan over medium heat, cook the bacon until lightly browned.
    • Add diced onion, carrot, celery, and minced garlic. Cook until they begin to brown.
    • Add lean ground beef and cook until evenly browned. Drain any excess fat.
    • Stir in tomato paste, dry white wine, and seasoning. Cover and bring to a boil, then reduce heat and simmer for 30-40 minutes.
  2. Prepare the Cheese Sauce:

    • Heat milk and bay leaf in a small saucepan until just below boiling point. Remove from heat and discard the bay leaf.
    • In another saucepan, melt butter over medium heat. Stir in flour and cook for 2 minutes, stirring constantly.
    • Gradually add the hot milk to the roux, stirring until thick and smooth. Reduce heat to low and simmer for 10 minutes, stirring occasionally. Season with nutmeg.
    • Remove from heat and add grated mozzarella cheese. Stir until the cheese has melted and the sauce is smooth. Cover the surface with plastic wrap if not using immediately.
  3. Assemble the Lasagna:

    • Preheat the oven to 350°F (175°C). Grease a 9″ x 13″ x 2″ baking dish or 3-quart oblong casserole dish.
    • Cover the bottom of the baking pan with a layer of lasagna noodles.
    • Spoon half of the prepared Meat Sauce evenly over the noodles.
    • Add another layer of noodles and spread half of the Cheese Sauce over them.
    • Repeat the layers, ending with a final layer of Cheese Sauce on top.
    • Sprinkle grated Parmesan cheese over the top.
    • Bake in the preheated oven for 30-40 minutes, or until bubbly and golden brown on top.
