Recipe: Beef Burgundy

Description: Sooo good! I’ll confess I got this recipe from Rachael Ray’s “30 Minute Meals”, but it’s too good not to share with everyone. Don’t let all the steps scare you (I spelled it out clearly for beginner cooks)…it’s actually very easy and very worth it!

Ingredients:

  • 3 slices bacon
  • 3 tablespoons unsalted butter
  • 16 ounces white mushrooms, sliced
  • 1 tablespoon flour
  • 2 cups Burgundy wine
  • 3 cups beef broth
  • 1 sprig fresh sage
  • 1 sprig fresh thyme
  • 1 1/2 onions, chopped
  • 3 – 4 servings beef, cubed
  • Salt and pepper to taste

Instructions:

  1. In a large deep skillet, heat over medium-high heat.

  2. Add chopped bacon and brown until crisp. Remove bacon bits and set aside.

  3. Add 1 1/2 tablespoons of butter to the pan and melt into the bacon drippings.

  4. Add mushroom slices to the pan and turn to coat evenly. Season with salt and pepper. Saute mushrooms for 2 to 3 minutes.

  5. Add chopped onions and saute for another 2 to 3 minutes. Remove mushrooms and onions to a plate and set aside.

  6. Return the pan to high heat and add the remaining butter to melt.

  7. Add cubed beef to the pan and brown evenly on all sides, keeping the meat moving.

  8. Sprinkle flour over the meat and cook for 2-3 minutes.

  9. Pour wine into the hot pan and deglaze by scraping the bottom to loosen all cooked-on bits. Bring to a low boil.

  10. Add beef broth and the bundle of sage and thyme. Cover and return to a boil.

  11. Reduce heat to medium and cook covered for 5 minutes.

  12. Uncover and add mushrooms, onions, and bacon to the pan.

  13. Simmer uncovered until the sauce thickens slightly.

  14. Adjust seasoning and remove the herb bundle.

  15. Serve over hot herbed noodles, rice, or garlic mashed potatoes.
