Ground coriander 1 tablespoon
Smoked paprika 1 tablespoon
Salt (to taste) 1 tablespoon
Black pepper 1 tablespoon
Ripe tomatoes (diced) 200g
Fresh spring onions (sliced) 40g
Hot green chili (sliced) 10g
Fresh parsley (chopped) 1 bunch
Lime juice 20g
Sour cream 100g
Greek yogurt 50g
Tabasco® sauce (optional) To taste

Instructions:

  1. Marinate the Beef:
    Start by cutting the beef into large cubes. Place the meat into a dish and add the ground coriander, smoked paprika, extra virgin olive oil (10g), salt, and black pepper. Mix everything well to ensure that the beef is evenly coated with the marinade. Allow the beef to marinate for at least 30 minutes in the refrigerator. Once marinated, bring it to room temperature before cooking.

  2. Preheat the Oven:
    Preheat your oven to 200°C (392°F) in fan-assisted mode while you prepare the rest of the ingredients.

  3. Cook the Onions:
    In a casserole dish suitable for oven use, heat the remaining 25g of extra virgin olive oil over medium heat. Add the sliced onions and sauté them, stirring occasionally for about 10 minutes, until they soften and become slightly caramelized.

  4. Add Beer to the Onions:
    Once the onions have softened, pour in the light beer, stir, and cover the dish with a lid. Allow the onions and beer to cook together while you prepare the other components of the dish.

  5. Prepare the Tomato Salad:
    While the beef cooks, prepare a fresh tomato salad. Wash and dice the tomatoes into small cubes. Slice the spring onions into rings, and remove the seeds from the hot green chili before slicing it thinly. Chop the parsley finely and combine all these ingredients in a mixing bowl. Add the lime juice, 40g of olive oil, and salt to taste. Toss everything together and set aside.

  6. Make the Yogurt Sauce:
    In a separate bowl, mix the Greek yogurt and sour cream together. Add a few dashes of Tabasco® sauce (or to your desired heat level). Stir until smooth, and refrigerate the sauce until you’re ready to serve.

  7. Cook the Beef:
    After the marination time, place the beef into the preheated oven along with the onions and beer. Let the beef cook for about 20-30 minutes or until it becomes tender enough to easily shred with a fork. Once done, remove the beef from the oven and check for tenderness.

  8. Assemble the Tacos:
    Once the beef is cooked and tender, it’s time to assemble the tacos. Take the taco shells and fill each with a generous portion of the shredded beef. Top each taco with a spoonful of the fresh tomato salad. Add a dollop of the creamy yogurt sauce on top for that extra flavor boost.

  9. Serve and Enjoy:
    Serve the beef tacos immediately, garnished with extra parsley if desired, and enjoy this savory and satisfying meal!
