Bakso Sapi (Blender Method) Recipe

Ingredients

For the Meatballs:

  • 250 grams beef chuck or beef sirloin (trimmed of any fat)
  • 35 grams crushed ice (2-3 small ice cubes)
  • 1 egg white
  • 3 tablespoons tapioca flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon baking powder
  • 2 cloves garlic, fried and minced

For the Broth:

  • 1300 ml reserved meatball cooking water
  • 5 cloves garlic, fried and minced
  • Salt, to taste
  • Ground black pepper, to taste
  • 1-2 stalks green onions, thinly sliced
  • A handful of beef tendon (optional)

To Serve:

  • Noodles or vermicelli
  • Chili sauce
  • Soy sauce
  • Sweet soy sauce
  • Fried shallots
  • Wontons or crackers

Instructions

  1. Prepare the Meatballs:

    • Finely chop the beef, ensuring that there is no fat attached, as fat can clog the blender blades.
    • Place the chopped beef in a blender. Add the crushed ice and blend until the mixture is smooth and well-combined. This step helps to ensure the meatballs have a nice, smooth texture.
    • Once blended, add the egg white and blend briefly to mix.
    • Add the tapioca flour, fried garlic, ground black pepper, and salt. Blend until the mixture is homogeneous.
    • Transfer the mixture to a bowl. If the mixture is too sticky, add a little more tapioca flour and mix well.
  2. Shape the Meatballs:

    • Prepare a bowl with ice water.
    • Bring a pot of water to a boil.
    • Form the beef mixture into small balls and drop them into the boiling water. Cook until the meatballs float to the surface. Let them cook for an additional 2-3 minutes.
    • Remove the meatballs with a slotted spoon and immediately place them into the bowl of ice water. This cooling process helps to firm up the meatballs and gives them a chewy texture.
  3. Prepare the Broth:

    • In a separate pot, use the water left from cooking the meatballs to make the broth. This water is flavorful and rich.
    • Add the minced fried garlic to the pot.
    • Season with salt and ground black pepper to taste.
    • If using beef tendon, add it to the broth.
    • Simmer for a few minutes, then add the sliced green onions. Adjust the seasoning as needed.
  4. Assemble and Serve:

    • In serving bowls, place noodles or vermicelli. Add a few meatballs to each bowl.
    • Pour the hot broth over the meatballs and noodles.
    • Garnish with fried shallots.
    • Serve with optional accompaniments such as chili sauce, soy sauce, sweet soy sauce, and fried wontons or crackers.
