Ingredients:

  • 1 1/2 eggs 🥚
  • 3 oz cheddar cheese, shredded 🧀
  • 2 oz Swiss cheese, shredded 🧀
  • 4 slices smoked bacon, cooked and chopped 🥓
  • 4 onions, diced 🧅
  • 4 tbsp butter 🧈
  • 2 tsp salt 🧂
  • 2 tsp onion powder
  • 1 tsp nutmeg
  • 1 tsp pepper
  • 1 pie crust (store-bought or homemade) 🥧
  • 1 tbsp flour

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Also, preheat a cookie sheet or place an upside-down cast iron pan in the oven.

  2. Parbake Pie Crust:

    • Line the uncooked pie crust with parchment paper and fill it with pie weights or uncooked dry beans.
    • Place the crust atop the preheated cookie sheet or cast iron pan and bake for 10-15 minutes, or until golden brown.
  3. Prepare Egg Mixture:

    • In a mixing bowl, whisk together the eggs and milk until thoroughly combined.
    • Add onion powder, pepper, and nutmeg to the egg mixture.
  4. Cook Onions:

    • In a skillet, melt the butter over medium heat. Add diced onions and cook until soft and translucent.
    • Sprinkle salt over the onions while cooking to prevent browning. It’s okay if they get a little brown—it adds flavor!
    • Once cooked, remove the onions from heat and set them aside.
  5. Prepare Cheese Mixture:

    • If not already shredded, grate the cheddar and Swiss cheese until you have a total of 8 ounces of shredded cheese.
    • Mix the shredded cheese with flour to prevent clumping.
  6. Assemble Quiche:

    • Remove the parbaked crust from the oven.
    • Spread the cooked onions evenly over the crust, followed by the chopped bacon and shredded cheese mixture.
  7. Pour Egg Mixture:

    • Carefully pour the egg and milk mixture over the fillings until the crust is full, but not overflowing. Be cautious not to overfill!
  8. Bake Quiche:

    • If desired, cover the edges of the pie crust with foil to prevent over-browning. Remove the foil during the last 10 minutes of baking.
    • Bake the quiche in the preheated oven for 30 minutes or until the center is set and the top is golden brown.
