Ingredients:

  • 1 head of garlic
  • 4 large russet baking potatoes
  • 3 tablespoons butter
  • 1/3 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

  2. Prepare Garlic: Cut off and discard the top third of the garlic head, exposing the cloves. Wrap the garlic in aluminum foil.

  3. Bake Potatoes and Garlic: Prick the potatoes several times with a fork. Place the potatoes and the wrapped garlic on the middle rack of the oven. Bake for 45 minutes, until the potatoes are tender and the garlic is soft and fragrant.

  4. Cool and Prepare Garlic: Remove the garlic from the oven and allow it to cool slightly. Once cooled, squeeze the roasted garlic cloves into a bowl, discarding the skins.

  5. Prepare Cheese Mixture: To the bowl of roasted garlic, add the butter, sour cream, and 1 cup of shredded cheddar cheese. Mix well to combine into a creamy mixture.

  6. Prepare Potatoes: Cut each baked potato lengthwise, removing the top fourth of each potato and discarding it. Scoop out the insides of the potatoes and add them to the bowl with the cheese mixture.

  7. Mash and Season: Mash the potato and cheese mixture with a fork until well combined. Season with salt and pepper to taste.

  8. Fill Potato Shells: Divide the mashed potato mixture evenly among the potato shells, filling each one generously.

  9. Top with Cheese: Arrange the filled potato shells in a small baking pan. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of each potato.

  10. Bake Again: Return the potatoes to the oven and bake until heated through and the cheese is melted and bubbly, about 15 to 20 minutes.

  11. Serve: Once heated through, remove the potatoes from the oven and allow them to cool slightly before serving. Garnish with fresh chives or parsley if desired, and enjoy!
