Ingredients:

  • 4-5 chicken thighs
  • 2 quarts water
  • 1 celery stalk, diced
  • 2 cups green peas
  • 1 carrot, sliced
  • 1/4 cup white wine
  • 1/4 teaspoon black pepper
  • 1/3 cup poultry seasoning
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 2 cans refrigerated biscuit dough

Instructions:

Step Description
1 In a large pot, bring 2 quarts of water to a boil.
2 Add the chicken thighs to the boiling water and cook until done, ensuring the juice runs clear when poked.
3 Remove the cooked chicken thighs from the pot and place them in a separate dish.
4 To the pot of boiling water, add diced celery, green peas, sliced carrots, and white wine.
5 Allow the mixture to return to a boil.
6 Pinch off small pieces of the refrigerated biscuit dough and drop them into the boiling water.
7 Stir the mixture gently to separate the biscuit pieces.
8 Let the mixture boil for a couple of minutes, then add the cans of cream of chicken and cream of celery soup.
9 Stir until the soup is mostly dissolved into the mixture.
10 The boiling may slow down after adding the soups, so allow it to return to a rapid boil.
11 Reduce the heat to low and let the mixture simmer for about 20-25 minutes, or until the dumplings reach your desired texture.
12 Tear the cooked chicken thighs into bite-sized pieces and return them to the pot.
13 Stir the mixture well to incorporate the chicken pieces.
14 Serve hot and enjoy the comforting flavors of these Chicken & Biscuit Dumplings!
