Mie Yamien Ayam Jamur Bakso

Ingredients

Topping Ingredients:

  • 250 grams chicken fillet, diced
  • 100 grams mushrooms (any variety; here, we use straw mushrooms)
  • 3 cloves garlic, minced
  • 3 scallions, chopped
  • 2 tablespoons soy sauce
  • 1/2 tablespoon sesame oil
  • 1 tablespoon sweet soy sauce
  • Water, as needed

Noodle Mixture Ingredients:

  • 1 teaspoon oil (reserved from sautéed garlic and scallions in the topping recipe)
  • 1 teaspoon sweet soy sauce
  • 1 teaspoon soy sauce

Additional Ingredients:

  • Mustard greens
  • Noodles
  • Meatballs

Instructions

Preparing the Chicken and Mushroom Topping:

  1. Begin by sautéing the chopped scallions and minced garlic in a pan, setting aside a small amount of the sautéed oil for later use in the noodle mixture.
  2. Once the garlic becomes fragrant and turns golden brown, add the diced chicken fillet to the pan along with the soy sauce and sesame oil. Cook until the chicken turns white.
  3. When the chicken is cooked through, add the mushrooms, sweet soy sauce, and a splash of water. Continue to cook until the liquid has evaporated and the mushrooms are tender.

Preparing the Noodles and Meatballs:

  1. In a separate pot, bring water to a boil and cook the meatballs until they float to the surface.
  2. Add the noodles to the boiling water and cook until just about done. A minute before the noodles are fully cooked, add the mustard greens and let them blanch in the boiling water.

Assembling the Dish:

  1. Drain the noodles and mix them with the reserved sautéed garlic oil, sweet soy sauce, and soy sauce. Toss until the noodles are evenly coated with the mixture.
  2. Place the noodles in a serving bowl and arrange the chicken and mushroom topping over the noodles.
  3. Add the cooked meatballs and mustard greens to the bowl.
