Instructions:
- Preheat your oven to 325ยฐF (165ยฐC).
- Melt the bittersweet chocolate and unsalted butter together, then set aside to cool slightly.
- In a bowl, whisk together the flour, baking powder, and salt until well combined.
- In a large mixer bowl, beat the eggs, granulated sugar, and vanilla extract until pale yellow and slightly thickened, which should take about 5 minutes with a mixer on medium speed.
- Reduce the mixer speed to low, then gradually beat in the cooled chocolate mixture followed by the flour mixture until everything is well blended.
- Stir in the chocolate chips until evenly distributed throughout the batter.
- Drop the cookie dough onto a nonstick baking sheet, using about 2 leveled tablespoons of dough per cookie and spacing them about 2 inches apart.
- Bake in the preheated oven for approximately 14 minutes, or until the tops of the cookies are slightly cracked, with the centers still soft.
