Instructions
For the Cake:
-
Preheat the Oven
Preheat your oven to 350ยฐF (175ยฐC) and lightly grease an 8 x 11-inch baking pan. Dust the pan with a little flour to ensure the cake doesn’t stick. -
Sift the Dry Ingredients
In a large mixing bowl, sift together the sugar, flour, and baking soda. Set aside. -
Melt the Butter
In a medium saucepan over low heat, melt 1 stick of unsalted butter. Stir occasionally to avoid burning. -
Add Water and Cocoa
Once the butter has melted, add 1 cup of water. Stir until blended and smooth. Then, add 1/4 cup of cocoa powder and stir until fully combined and smooth. -
Bring to a Boil
Bring the mixture to a boil, stirring constantly. Let it boil for about 2 minutes. -
Combine with Dry Ingredients
Gradually add the sifted dry ingredients into the saucepan, stirring until everything is well incorporated. -
Add Buttermilk, Eggs, and Vanilla
Stir in 1/2 cup of buttermilk, followed by the 2 eggs. Mix well until the batter is smooth. Add the 1 teaspoon of pure vanilla extract and stir until completely blended. -
Bake the Cake
Pour the batter into the prepared 8 x 11-inch cake pan, spreading it evenly. Bake for approximately 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. -
Cool the Cake
Once baked, remove the cake from the oven and let it cool while you prepare the icing. The cake should be slightly warm when you pour the fudge icing over it.
For the Icing:
-
Melt the Butter
In a saucepan, melt 1 stick of unsalted butter over medium heat. -
Add Milk and Sugar
Add 1/2 cup of evaporated milk and 1 cup of sugar to the melted butter. Stir well to combine, and bring the mixture to a boil. Allow it to boil for 2 minutes, stirring constantly. -
Remove from Heat
Once it has boiled for 2 minutes, remove the saucepan from heat. -
Stir in Chocolate Chips and Marshmallows
Add the 1 1/2 cups of semi-sweet chocolate chips and 2 cups of miniature marshmallows. Stir the mixture until everything is melted and the icing thickens slightly. -
Pour Over Cake
Once the icing is smooth and thick, pour it generously over the warm cake, ensuring it covers the entire surface. -
Let Cool and Set
Allow the cake and icing to cool completely before slicing. This helps the fudge icing set into a smooth, rich topping that is the perfect complement to the moist cake.

Tips and Variations:
- For a nuttier version, feel free to add 1 cup of chopped nuts (pecans or walnuts work great) into the icing for an extra crunch.
- Add a little extra vanilla to the cake batter for an enhanced flavor profile.
- Make it a layered cake: If you want a taller, more elegant presentation, you can double the recipe and layer the cake, using frosting in between layers as well.
