When the cold weather sets in, there’s nothing quite like a hearty bowl of Carol’s Vegetable Soup to warm you up. Not only does it fill your kitchen with a delightful aroma, but it also nourishes the soul with its wholesome goodness. Packed with a medley of vegetables and flavorful herbs and spices, this soup is a comforting treat that’s perfect for chilly nights.

Ingredients:

  • 2 cans of tomatoes with juice
  • 2/3 cup tomato paste
  • 2-3 cloves garlic
  • 2 teaspoons red pepper flakes
  • 2 teaspoons oregano
  • 2/3 teaspoon cumin
  • 2/3 teaspoon salt
  • 2/3 teaspoon ground black pepper
  • 1/2 cup chicken broth
  • 4 cups beef broth
  • 4 potatoes, diced
  • 1 carrot, sliced
  • 1 onion, chopped
  • 3/4 cup bok choy, chopped
  • 2 celery stalks, chopped
  • 3/4 cup fresh green beans, trimmed and cut into bite-sized pieces
  • Salt, to taste

Instructions:

  1. Puree the first 8 ingredients: In a food processor or blender, combine the canned tomatoes with their juice, tomato paste, garlic cloves, red pepper flakes, oregano, cumin, salt, and black pepper. Blend until smooth and well-combined.

  2. Combine puree’d mixture and remaining ingredients: Transfer the pureed mixture to a VERY LARGE stock pot. Add in the chicken broth, beef broth, diced potatoes, sliced carrot, chopped onion, chopped bok choy, chopped celery, and fresh green beans.

  3. Simmer: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let the soup simmer, covered, for 30 to 45 minutes, or until the vegetables are tender and the flavors have melded together. Stir occasionally and adjust the seasoning with salt, if needed.

  4. Serve: Ladle the hot vegetable soup into bowls and serve it piping hot. Optionally, garnish with fresh herbs like parsley or a dollop of sour cream for extra flavor.
