Description:

GREAT WITH WINGS! This is an adaptation of Helen Corbitt’s Roquefort Dressing. Made with Blue Stilton, it is a flavorful blue cheese dressing. Not so mild as standard blue but not so overpowering as Roquefort. I always make it with the requested portion of Beau Monde, but then wish I had reduced it slightly so you may want to make it a scant 1/2 t. Also, to serve as a thick dip, you can reduce the half and half to 1/2 c.

Ingredients:

Quantity Ingredient
4 oz Cream Cheese
1/2 cup Stilton Cheese
2/3 cup Half-and-Half
1/4 tsp Salt
1/8 tsp Garlic Powder
1/4 tsp Fresh Ground Black Pepper
1/4 tsp Prepared Yellow Mustard
1/2 cup Mayonnaise

Instructions:

  1. Blend cheeses with the seasonings. In a mixing bowl, combine the cream cheese, Stilton cheese, salt, garlic powder, black pepper, and prepared yellow mustard.

  2. Add mayo alternately with cream. Slowly add the mayonnaise, alternating with the half-and-half, until everything is well incorporated.

  3. Whip until smooth and refrigerate. Using a hand mixer or a stand mixer, whip the mixture until it is smooth and creamy. Refrigerate for at least 4 hours, or preferably overnight, to let the flavors meld.

  4. Serve and enjoy! Use this delicious Blue Cheese Dressing with your favorite salads, as a dipping sauce for wings, or as a flavorful topping for grilled meats.

Tips:

  • Adjust Beau Monde seasoning: If you find the Beau Monde seasoning to be too strong, start with a scant 1/2 teaspoon and adjust to your taste.

  • Thick Dip Option: For a thicker consistency, reduce the amount of half-and-half to 1/2 cup. This will make the dressing perfect for dipping veggies or chips.

  • Make Ahead: This dressing gets even better as it sits, so feel free to make it a day ahead for parties or gatherings.

  • Storage: Store any leftover dressing in an airtight container in the refrigerator for up to a week. Remember to give it a good stir before using.

  • Versatile Use: Besides salads and wings, try this dressing as a spread for sandwiches or wraps, or even as a flavorful sauce for pasta dishes.
