Instructions:

  1. In a blender, whiz up the lemon juice, Worcestershire sauce, Tabasco sauce, minced garlic cloves, anchovy paste, and Parmesan cheese until smooth.
  2. Slowly drizzle olive oil into the blender while it’s running to make a creamy emulsion.
  3. Optionally, add an egg yolk to the mixture if desired.
  4. Chill the dressing in the blender carafe for at least 20 minutes to 1 hour to let the flavors meld together.
  5. Whiz up the dressing again before using and adjust the taste if necessary.
  6. Assemble torn lettuce, croutons, and bacon bits in a very large bowl.
  7. Gradually add the dressing to the salad, tossing it until everything is evenly coated.
  8. Present the salad with a sprinkle of extra cheese and pepper, if desired.

Additional Tips:

  • For an extra special touch, cube and toast any leftover bread like sourdough, pumpernickel, or Italian bread into about 1-inch cubes.
  • Toast the bread cubes in the oven on a cookie sheet until golden brown and crispy.
  • After frying the bacon bits, reserve a tablespoon of bacon drippings in the frying pan.
  • Add another tablespoon or so of butter and a little seasoning salt to the reserved drippings.
  • Toss the toasted bread cubes in the flavorful drippings until coated, then let them cool slightly before tossing them onto the salad.
  • This step can be prepared ahead of time for convenience, making it a sinful yet delicious addition to the salad.
