Instructions:
1. Preparation:
- Preheat your oven to 325Β°F (163Β°C).
- Lightly brush the inside of a 9-inch pie or cake pan and the outside of a smaller pan with some of the melted butter.
2. Crust:
- In the bowl of a food processor, combine the crumbs and the remaining melted butter.
- Pat the mixture evenly into the prepared pan and press it down firmly with the bottom of the smaller pan.
- Bake the crust until firm and lightly browned, which should take about 15 minutes.
- Let the crust cool on a wire rack.
3. Filling:
- In the bowl of a mixer fitted with the whisk attachment, beat the cream cheese and sugar together for 2 minutes until smooth and creamy.
- Add the eggs one at a time, scraping down the sides of the bowl frequently.
- Beat in the lemon zest, vanilla extract, and salt until well combined.
- Gently fold in the sour cream by hand until the mixture is smooth and evenly mixed.
4. Assembly:
- Scrape the prepared filling into the cooled crust, spreading it out evenly and smoothing the top with a spatula.
5. Baking:
- Bake the cheesecake until it is barely set in the center, about 45 minutes. The edges should be slightly puffed, and the center should still have a slight jiggle to it.
- Once baked, remove the cheesecake from the oven and let it cool in the pan on a wire rack.
6. Refrigeration:
- Once cooled, cover the cheesecake with plastic wrap or aluminum foil and refrigerate it for at least 3 hours or overnight to allow it to set properly.
7. Serving:
- When ready to serve, remove the cheesecake from the refrigerator and let it sit at room temperature for about 15-20 minutes before slicing.
- Garnish with fresh berries or a dusting of powdered sugar if desired.
- Slice and enjoy your delicious Cream Cheese Cheesecake with friends and family!
