Crispy Fried Chicken Recipe

Ingredients:

  • 1 kg fresh chicken
  • 1 kg all-purpose flour
  • 1 large egg
  • 5 cloves garlic
  • Salt and seasoning (to taste)
  • Ice-cold water

Instructions:

  1. Prepare the Chicken:
    Begin by cutting the chicken into pieces according to your preference. Rinse the pieces thoroughly under cold water to ensure they are clean and free of any blood.

  2. Make the Marinade:
    In a blender or food processor, finely crush the garlic cloves along with salt to create a smooth paste. Transfer the paste into a bowl and add a small amount of water to help incorporate the flavors. Mix well to form the marinade.

  3. Marinate the Chicken:
    Coat the chicken pieces with the garlic marinade, ensuring each piece is evenly covered. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to infuse the meat.

  4. Prepare the Breading Stations:
    Set up two separate bowls for the breading process. In a large bowl, combine 750 grams of all-purpose flour with salt and seasoning to taste. Mix thoroughly to distribute the seasonings evenly throughout the flour.

    In a smaller bowl, place the remaining 250 grams of flour and add enough ice-cold water to form a batter. Crack the egg into the mixture and whisk until the batter is smooth and well combined.

  5. Bread the Chicken:
    Remove the marinated chicken from the refrigerator and let it drain slightly. Dip each piece into the batter, ensuring it is well coated.

    Transfer the coated chicken pieces into the bowl with the seasoned flour, rolling each piece to ensure it is completely covered with the dry flour mixture.

  6. Fry the Chicken:
    Heat a generous amount of oil in a large frying pan or deep fryer over low heat. The oil should be deep enough to submerge the chicken pieces fully for even cooking and a crispy texture.

    Fry the chicken pieces in batches, avoiding overcrowding the pan. Cook the chicken on low heat to ensure the meat is cooked through and the coating is crispy and golden brown. This slow cooking method helps the chicken cook evenly and stay juicy.

  7. Drain and Serve:
    Once the chicken is crispy and golden, remove it from the oil and place it on a paper towel-lined plate to drain any excess oil.
