Crispy Indonesian Fried Chicken (Ayam Goreng Kriuk)

Ingredients:

  • 5 pieces of chicken, cleaned and patted dry
  • 3 tablespoons of finely ground shallots
  • 3 tablespoons of finely ground garlic
  • 1 tablespoon of Royco seasoning (or any all-purpose seasoning)
  • 1 teaspoon of ground black pepper
  • 1 cup all-purpose flour (adjust quantity for desired thickness)
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1 cup of water (or enough to create a thick batter)
  • Vegetable oil, for deep frying

Instructions:

  1. Marinate the Chicken:
    Begin by seasoning the chicken with the finely ground shallots and garlic. Allow the chicken to marinate for at least 1 hour. During this time, the chicken will release some of its juices; do not discard this liquid as it will be used in the batter.

  2. Prepare the Coating:
    In a large bowl, mix the all-purpose flour with Royco seasoning, ground black pepper, salt, and baking powder. Set aside. Note: For a thicker coating, use more flour as desired.

  3. Coat the Chicken:
    Add the marinated chicken along with the reserved marinade to the prepared flour mixture. Gently massage and press the flour mixture onto the chicken to ensure a thick, even coating.

  4. Fry the Chicken:
    Heat a generous amount of vegetable oil in a deep pan or wok over medium heat. Ensure there is enough oil to submerge the chicken pieces completely for even cooking. Once the oil is hot, carefully add the coated chicken pieces. Fry in batches if necessary to avoid overcrowding.

  5. Cook Until Crispy:
    Fry the chicken until golden brown and crispy, about 10-15 minutes per batch, depending on the size of the pieces. Maintain a steady heat to ensure the chicken cooks evenly and the coating becomes crispy.

  6. Drain and Serve:
    Once fried, remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil. Serve hot and enjoy your crispy Indonesian fried chicken!

Tips:

  • For extra crispiness, you can double-coat the chicken by dipping it in the flour mixture, then back into the reserved marinade, and coat again with the flour mixture.
