Cuban Sandwich Recipe

Ingredients:

Baguette 2 pieces

Pickled gherkins 6
Cooked ham 200g
Edam cheese 200g

Instructions:

  1. Prepare the Marinade:
    Begin by making the marinade for the pork. Squeeze the juice of one lemon and one orange into a bowl. Chop the fresh coriander finely and crush the garlic with the side of a knife. Add the coriander, crushed garlic, olive oil, cumin, and coarse salt to the citrus juice. Mix everything together.

  2. Marinate the Pork:
    Place the pork loin in the bowl, ensuring it is fully coated with the marinade. Cover the bowl with plastic wrap and let the pork marinate for at least 2 hours, or up to 12 hours for more flavor. Make sure to turn the meat occasionally to allow for even marination.

  3. Cook the Pork:
    After marination, place the pork loin in a baking dish. Lightly drizzle with some of the marinade liquid and cook it in the oven at 180Β°C (350Β°F) for about 25-30 minutes, or until fully cooked and tender.

  4. Slice the Ingredients:
    Once the pork is cooked, slice the pork and Edam cheese into thin slices using a meat slicer (or a sharp knife if you don’t have one). Slice the pickled gherkins into 3-4mm thick slices lengthwise.

  5. Prepare the Baguette:
    Using a serrated knife, cut each baguette in half lengthwise. Spread the melted butter evenly on both sides of the baguette. Preheat a grill or griddle pan and toast the baguette for 2 minutes, turning it to get an even golden crisp on both sides.

  6. Assemble the Sandwich:
    Spread mustard on both toasted sides of the baguette. Layer the sliced pork loin, cooked ham, and Edam cheese slices on one half of the baguette. Top with the sliced gherkins.

  7. Grill the Sandwich:
    Close the sandwich and place it back on the grill or griddle. Press down gently and grill for 2 minutes on each side, until the sandwich is golden, crispy, and the cheese has melted.

  8. Serve:
    Once ready, cut each Cuban sandwich in half and serve immediately while hot and crispy.
