Instructions:

Preheat your oven to 350 degrees F (175 degrees C).

Line the bottoms of two 9-inch round cake pans with parchment paper, and butter the sides generously.

In a large bowl, beat together the butter and brown sugar until light and fluffy, which should take about 5 minutes.

Add the eggs one at a time, beating well after each addition.

Mix in the vanilla extract and instant coffee granules until fully incorporated.

In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.

Gradually add the flour mixture into the creamed butter and sugar mixture, alternating with the buttermilk in three additions, making sure to scrape down the sides of the bowl after each addition.
