Kittencal’s Best Deep Dark Chocolate Layer Cake

Ingredients:

Ingredient Quantity
Butter 1 cup
Brown sugar 1 1/2 cups
Eggs 3
Buttermilk 1 1/2 cups
Vanilla 2 tsp
Instant coffee granules 1 tbsp
All-purpose flour 2 cups
Cocoa powder 1/2 cup
Baking soda 1 1/2 tsp
Salt 3/4 tsp
Icing sugar 4 cups

Instructions:

  1. Preheat your oven to 350 degrees F (175 degrees C).

  2. Line the bottoms of two 9-inch round cake pans with parchment paper, and butter the sides generously.

  3. In a large bowl, beat together the butter and brown sugar until light and fluffy, which should take about 5 minutes.

  4. Add the eggs one at a time, beating well after each addition.

  5. Mix in the vanilla extract and instant coffee granules until fully incorporated.

  6. In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.

  7. Gradually add the flour mixture into the creamed butter and sugar mixture, alternating with the buttermilk in three additions, making sure to scrape down the sides of the bowl after each addition.

  8. Divide the batter evenly between the prepared cake pans.

  9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  10. Once baked, remove the cakes from the oven and transfer them to a wire rack to cool. Remove the parchment paper from the bottoms.

  11. While the cakes are cooling, prepare the frosting.

For the Frosting:

  1. In a large mixing bowl, beat the butter until creamy.

  2. Gradually blend in the cream and vanilla extract, beating until the mixture is very smooth.

  3. Add the cocoa powder and icing sugar to the bowl.

  4. Beat the mixture on high speed for about 45 seconds, until the frosting is light and fluffy.

  5. Once the cakes are completely cooled, frost them generously with the prepared chocolate frosting.

  6. Serve and enjoy this irresistibly rich and moist deep dark chocolate layer cake!

Additional Tips:

  • For an extra indulgent twist, consider using room temperature Crisco butter-flavor shortening in place of butter.
