Ingredients:

  • 1/4 cup dried kidney beans
  • 1/4 cup dried white beans
  • 1/4 cup dried pink beans
  • 1/4 cup dried black beans
  • 1/4 cup dried pinto beans
  • 1/4 cup cranberry beans
  • 1/4 cup dried navy beans
  • 1/4 cup bacon, minced
  • 1 onion, diced
  • 5 cloves garlic, minced
  • 2/3 tsp ground cinnamon
  • 1/4 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground poblanos
  • 1/2 Italian plum tomatoes, diced
  • 108 oz beer
  • 12 oz lean ground beef
  • Salt, to taste

Instructions:

  1. In a large pot, soak all the dried beans together overnight in water to cover.
  2. The next day, drain the soaked beans and add fresh water to cover them.
  3. Cook the beans at a simmer for about 1 1/2 hours or until they are just tender.
  4. Meanwhile, in a large skillet, cook the minced bacon over medium heat until it begins to crisp.
  5. Add diced onions and minced garlic to the skillet with the bacon and cook for about 5 minutes until softened.
  6. Stir in ground cinnamon, paprika, cayenne pepper, and ground poblanos, and cook for another 5 minutes to release their flavors.
  7. Add diced tomatoes with their juice and beer to the skillet, then let the mixture simmer for half an hour.
  8. In another pan, cook the lean ground beef until it’s no longer pink. Drain any excess fat.
  9. Add the cooked ground beef to the tomato mixture in the skillet.
  10. Once the beans are fully cooked, drain them, reserving the liquid, and add them to the meat and tomato mixture.
  11. Season the chili with salt to taste and let the mixture simmer for about 1 hour, allowing the flavors to meld together.
  12. If the chili seems too dry, you can add some of the reserved bean liquid to achieve your desired consistency.
