The original recipe, originating from Leanne Ely’s “Healthy Foods,” might have had a different name, but in our house, we’ve always affectionately dubbed them “The Everything Cookie” for their abundance of ingredients! This recipe is wonderfully forgiving; if you’re missing one ingredient, feel free to substitute it with another. Whether it’s pumpkin, pureed prunes, or a surplus banana, the choice is yours. You can also mix and match nuts or seeds to your liking, or opt for all whole wheat flour if that’s what’s in your pantry. Packed with wholesome ingredients, these cookies make for a delightful treat any time of day.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup honey
  • 1 tablespoon molasses
  • 2 eggs
  • 1/2 cup peanut butter
  • 1/2 cup pumpkin puree
  • 1/2 cup powdered milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup whole wheat flour
  • 1/2 cup oatmeal
  • 1/2 cup wheat germ
  • 1/2 cup raisins
  • 1/2 cup chocolate chips
  • 1/2 cup nuts of your choice (e.g., walnuts, almonds), chopped

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Prepare your cookie sheets by spraying them lightly with cooking spray.

  2. Mix wet ingredients: In a large mixing bowl, combine the mashed bananas, honey, molasses, eggs, peanut butter, and pumpkin puree. Mix well until the ingredients are thoroughly combined.

  3. Incorporate dry ingredients: Add the powdered milk, baking powder, baking soda, whole wheat flour, oatmeal, and wheat germ to the wet mixture. Stir until everything is well combined. If the dough seems too stiff, add a little water to achieve the desired consistency.

  4. Add mix-ins: Once the dough is well mixed, fold in the raisins, chocolate chips, and chopped nuts. Ensure that these ingredients are evenly distributed throughout the dough. Again, if the dough feels too stiff, adjust the consistency by adding a small amount of water.

  5. Form cookies: Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared cookie sheets, leaving some space between each cookie to allow for spreading during baking.

  6. Bake: Place the cookie sheets in the preheated oven and bake for 8 to 10 minutes, or until the cookies turn golden brown around the edges.
