Ingredients:

Quantity Ingredient
6 Potatoes
2 Spanish onions
1 Garlic bulb
1/2 Jalapeno havarti cheese
1/2 Parmesan cheese
1/4 Butter
2% low-fat milk
1 Parsley

Instructions:

  1. Prepare the Potatoes: Start by washing and scrubbing the potatoes thoroughly. Pat them dry with a towel and slice them into approximately 1/4 inch thick rounds. Using a mandolin slicer works best for achieving uniform slices.

  2. Slice the Onions: Peel the Spanish onions and slice them into 1/4 inch thick rings using a mandolin slicer.

  3. Prep the Garlic: Remove as much of the paper skin from the garlic bulb as possible without separating the cloves. Slice the entire bulb into thin slices using a mandolin slicer. Discard any remaining skin and the base of the bulb.

  4. Layer the Casserole: Spray a casserole dish with vegetable spray. Begin by layering the bottom with slices of potatoes. Next, mix the onion rings and garlic slices together and layer them on top of the potatoes.

  5. Season and Add Cheese: Season the layers with salt and freshly ground pepper. Sprinkle a few cubes of jalapeno havarti cheese and a couple of slices of parmesan cheese over the onion and garlic layer. Add some cubes of butter on top.

  6. Repeat Layers: Continue layering the potatoes, onion, garlic, cheese, and butter, ensuring to end with a layer of cheese and butter on top.

  7. Prepare the Sauce: In a separate bowl, whisk together the mushroom soup, 2% low-fat milk, and chopped parsley until well combined.

  8. Pour Sauce Over Layers: Carefully pour the mushroom soup mixture over the layered potatoes, onions, and garlic, ensuring it covers the entire surface. If needed, gently lift the layers to allow the sauce to seep through.

  9. Bake: Preheat your oven to 325°F (160°C). Place the casserole dish on the middle rack of the oven and bake for 3 to 4 hours, or until the potatoes are tender and the top is golden brown and crisp.

  10. Serve: Once cooked, remove the casserole from the oven and allow it to cool for a few minutes before serving. Scoop generous portions onto plates and enjoy the comforting flavors of this indulgent dish.

Note: This recipe yields a generous serving, perfect for sharing with family and friends during brunch or as a comforting side dish for any meal. Feel free to adjust the seasoning and cheese quantities according to your personal taste preferences. Bon appétit! 🥔🧅🧄
