Ingredients:
| Quantity | Ingredient |
|---|---|
| 1 | dry yeast |
| 2/3 | cup gram flour |
| 1/2 | cup fava bean flour |
| 2 | tablespoons tapioca flour |
| 2 | tablespoons powdered milk |
| 1/2 | teaspoon xanthan gum |
| 1 | teaspoon salt |
| 1 | tablespoon unflavored gelatin |
| 2/3 | cup water |
| 1/2 | tablespoon honey |
| 1 | tablespoon olive oil |
| 1 | tablespoon cider vinegar |
Instructions:
- Preheat oven to 425 degrees F.
- In a medium bowl using regular beaters (not dough hooks), blend all ingredients on low speed.
- Ensure all ingredients are well incorporated.

- Beat on high speed for 3 minutes.
- This will help develop the structure of the dough.

- If the mixer bounces around the bowl or the dough is too stiff, add water if necessary, one tablespoon at a time, until the dough does not resist the beaters.
- The dough should resemble soft bread dough.

- Put the mixture on a lightly greased 12-inch pizza pan or 11 x 7-inch pan (for a deep dish version).
- Liberally sprinkle rice flour on the dough, then press the dough into the pan, continuing to sprinkle with flour to prevent sticking to hands.
- Make sure to coat the dough evenly to avoid sticking.

- Make the edges slightly thicker to hold toppings.
- Bake the pizza crust for 10 minutes.
- This will partially cook the crust and prepare it for toppings.

- Remove from the oven.
- Spread the pizza crust with your favorite sauce and toppings.
- Bake for another 20 to 25 minutes or until the top is nicely browned.
- Keep an eye on it to prevent burning.
