Grilled Meatloaf with a Flavorful Twist

Ingredients

  • 2 cups fresh mushrooms, finely chopped 🍄
  • 1 cup onion, finely chopped 🧅
  • ½ cup green pepper, finely chopped 🌶️
  • 1 tablespoon margarine 🧈
  • 2 tablespoons butter, softened 🧈
  • 1 cup fresh parsley, finely chopped 🌿
  • 1 clove garlic, minced 🧄
  • 1 large egg, beaten 🥚
  • 1 cup rolled oats 🌾
  • ¾ cup milk 🥛
  • ½ teaspoon salt 🧂
  • ¼ teaspoon black pepper 🌶️
  • 1½ pounds lean ground beef 🥩
  • 2 tablespoons catsup 🍅
  • 1 tablespoon prepared mustard 🌭
  • ¼ cup Worcestershire sauce 🍶

Instructions

  1. Prepare the Vegetable Mixture:

    • In a small saucepan, melt the margarine over medium heat. Add the finely chopped mushrooms, onion, and green pepper. Cook, stirring occasionally, for about 5 minutes or until the vegetables are tender and fragrant. Stir in the fresh parsley and cook for an additional minute. Remove from heat and allow the mixture to cool slightly.
  2. Mix the Meatloaf Base:

    • In a medium-sized bowl, combine the minced garlic, beaten egg, rolled oats, milk, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  3. Combine Ingredients:

    • Add the lean ground beef to the bowl. Mix thoroughly until the meat mixture is well combined with the other ingredients.
  4. Form the Meatloaf:

    • On a large piece of waxed paper, shape the meat mixture into a 12×8-inch rectangle. Spoon the cooled mushroom mixture evenly over the meat.
  5. Roll and Seal:

    • Starting at one short end of the rectangle, carefully roll up the meatloaf, using the waxed paper to help shape it. Pinch the seam and ends together to seal, ensuring the filling stays inside.
  6. Prepare for Grilling:

    • For the sauce, mix together the catsup, mustard, and Worcestershire sauce in a small bowl. Set aside.
  7. Prepare the Grill:

    • If using a gas grill, preheat it for 10-15 minutes. Reduce heat to medium-low on one burner and turn off the other burner. If using a charcoal grill, place an aluminum drip pan over the briquettes and ensure a medium-low heat.
  8. Wrap and Grill:

    • Fold a 24×18-inch piece of heavy-duty aluminum foil in half crosswise to make a 12-inch square. Cut several slits in the foil to allow for drainage. Place the meatloaf onto the foil.
  9. Grill the Meatloaf:

    • Place the foil with the meatloaf over the drip pan on the grill. Cover the grill and cook for 50-60 minutes, or until the meatloaf is no longer pink in the center. During the last 5 minutes of grilling, brush the meatloaf with the prepared sauce for a delicious glaze.
  10. Rest and Serve:

    • Once cooked, remove the meatloaf from the grill. Cover it with foil and let it rest for 15 minutes before slicing. This resting period allows the juices to redistribute, ensuring a moist and flavorful meatloaf.
