Total Time: 2 hours 45 minutes

Instructions:

  1. Prepare the Lamb:

    • Start by trimming any excess fat from the lamb shoulder.
    • Place the lamb on a cutting board and roll it out, then pound it with a meat mallet until it reaches an even thickness.
    • Pour the lemon juice over the lamb, ensuring it’s evenly coated.
    • In a separate bowl, prepare the filling by combining chopped onions, minced garlic, fresh parsley, dried basil, dried marjoram, salt, and fresh mint leaves. Spread this mixture evenly over the lamb.
    • Roll the lamb roast up tightly, starting from the smaller end, and tie it securely with kitchen twine at two-inch intervals.
  2. Brown the Lamb:

    • In a 6-quart Dutch oven, melt the butter over medium heat.
    • Once the butter is melted and hot, add the rolled lamb roast, and brown it on all sides until it develops a rich, golden color.
  3. Simmer the Lamb:

    • Spoon off any excess fat from the Dutch oven.
    • Measure out the beef broth and add enough water to equal 1 1/2 cups. Pour this liquid into the Dutch oven with the browned lamb.
    • Add the bay leaf to the pot.
    • Bring the liquid to a boil, then reduce the heat to low, cover the Dutch oven, and allow the lamb to simmer gently for approximately 1 1/2 hours, turning the meat occasionally to ensure even cooking.
  4. Add Potatoes and Onions:

    • After the lamb has simmered for 1 1/2 hours, add the new potatoes and whole onions to the Dutch oven.
    • Continue to simmer the lamb, potatoes, and onions, covered, for an additional 40 minutes or until the lamb is tender and the vegetables are cooked through.
  5. Prepare the Gravy:

    • Once the lamb and vegetables are cooked to perfection, transfer the vegetables to a serving dish and keep them warm.
    • Remove the lamb roast from the Dutch oven and place it on a cutting board. Allow it to rest for a few minutes before slicing.
    • Skim any excess fat from the pan drippings, then measure the drippings and add enough water to make 1 1/2 cups of liquid.
    • Return the drippings and water to the Dutch oven. In a separate bowl, mix the flour with 1/4 cup of water until smooth, then add this flour mixture to the pan drippings, whisking constantly.
    • Bring the gravy to a boil, then reduce the heat and let it simmer for about 3 minutes, allowing it to thicken slightly.
  6. Serve:

    • Slice the rested lamb roast into portions and arrange them on a serving platter.
    • Place the cooked potatoes and onions around the lamb slices.
    • Pour the savory gravy over the lamb and vegetables, ensuring each serving is generously coated.
    • Garnish with fresh mint leaves for a burst of color and added flavor.
  7. Enjoy!

    • Serve this succulent Lamb Roast alongside your favorite sides and enjoy a hearty meal that’s sure to impress family and friends alike. 🍽️🥩🥔
