Description:
“I hate meatloaf – DH loves it. I came up with this, modifying a recipe for meatballs, and we both love it. It doesn’t have a sauce because it doesn’t need it. It’s wonderful on it’s own. We like to roast carrots with it, and serve it with mashed potatoes and biscuits.”

Ingredients:
- 1 lb lean ground beef
- 8 oz ground pork
- 8 eggs
- 3 tbsp milk
- 1 1/2 cups grated parmesan cheese
- 1/2 cup chopped flat-leaf parsley
- 2/3 cup chopped fresh basil
- 1/4 tsp dried basil
- 1/4 cup minced garlic
- 2 tsp kosher salt
- 1 tsp black pepper
- 1/2 tsp cayenne pepper

Preparation:
- Preheat your oven to 375 degrees F (190 degrees C).
- Prepare a large baking sheet or a loaf pan by lining it with parchment paper or greasing lightly.

Mix Ingredients:
- In a large bowl or the bowl of your mixer, combine the lean ground beef, ground pork, eggs, milk, grated parmesan cheese, chopped flat-leaf parsley, chopped fresh basil, dried basil, minced garlic, kosher salt, black pepper, and cayenne pepper.

Shape the Meatloaf:
- Using your hands, mix all the ingredients together until well combined.
- Shape the mixture into a loaf shape and place it onto the prepared baking sheet or into the loaf pan.

Bake:
- Place the meatloaf in the preheated oven and bake for 35-40 minutes, or until the internal temperature reaches 160 degrees F (71 degrees C) and the meatloaf is cooked through.
- If desired, you can check for doneness by inserting a meat thermometer into the center of the loaf. It should register at least 160 degrees F (71 degrees C).

Serve:
- Once cooked, remove the meatloaf from the oven and let it rest for a few minutes before slicing.
- Serve the meatloaf hot, alongside your favorite sides such as roasted carrots, mashed potatoes, and biscuits.
Tips:
- Feel free to customize the recipe by adding your favorite herbs or spices to the meat mixture.
- For a crispier exterior, you can brush the top of the meatloaf with a little olive oil or melted butter before baking.
- Leftover meatloaf can be stored in an airtight container in the refrigerator for up to 3-4 days, or frozen for longer storage. Simply reheat in the oven or microwave before serving.
