Ingredients:

  • 1 whole chicken
  • 1 stalk celery
  • 1 sweet apple
  • 2 garlic cloves
  • Olive oil
  • Salt
  • Pepper

Instructions:

Step Description
1 Wash and dry the chicken thoroughly.
2 Pour olive oil onto one hand and coat the entire chicken with it.
3 Season the chicken generously with salt and pepper.
4 Preheat your oven to 350°F (175°C).
5 Place the chicken in a roasting pan.
6 Cut the celery into half-inch chunks and slice the apple into eighths.
7 Stuff half of the celery and half of the apple pieces into the cavity of the chicken.
8 Arrange the remaining celery and apple pieces around the chicken in the roasting pan.
9 Slice the garlic cloves into thin slivers.
10 Gently lift the skin of the chicken and insert half of the garlic slivers underneath, distributing them evenly.
11 Scatter the remaining garlic slivers either on top of the chicken skin or around the chicken in the roasting pan.
12 If desired, add a few sprigs of fresh rosemary in and around the chicken for added flavor.
13 Place the roasting pan in the preheated oven and roast the chicken.
14 Baste the chicken with the pan juices every 30 minutes or so to ensure it stays moist and flavorful.
15 Roast the chicken until it reaches an internal temperature of at least 165°F (75°C) in the thickest part of the thigh, and the juices run clear. This typically takes between 1.5 to 3 hours, depending on the size of the chicken.
16 Once the chicken is fully cooked, remove it from the oven and let it rest for 10-15 minutes before carving.
17 Carve the chicken into serving pieces and serve hot, accompanied by your favorite side dishes.
