Ingredients:

  • 1 whole turkey (14-16 pounds)
  • 2-3 tablespoons garlic granules
  • Extra virgin olive oil

Instructions:

  1. Prep the Smoker:

    • This recipe calls for a water smoker such as the Brinkmann “Smoke’n Pit” or the “Cook’N Ca’jun”. If you don’t own one already, it’s worth investing in!
    • The night before smoking, thoroughly wash the thawed turkey, both inside and out. Pat it dry with paper towels.
    • Season the turkey inside and out with lemon-herb seasoning, granulated garlic, salt, and pepper. Drizzle it with olive oil for a flavorful crust.
  2. Get the Smoker Ready:

    • Soak 5-6 large chunks of hardwood in water overnight. Avoid using chips; chunks provide a longer-lasting smoke.
    • About 12 hours before serving, start preparing the smoker. Place 10 pounds of charcoal in the fire-pan and light it gently. Ensure it’s enough to keep burning steadily.
    • Add 2-3 soaked hardwood chunks on top of the charcoal. Fill the water pan with water and place it above the fire-pan.
  3. Smoke the Turkey:

    • Carefully place the seasoned turkey on the smoker rack above the water pan.
    • Cover the smoker and let the magic happen. It’s time to relax!
  4. Maintain the Smoker:

    • After about 6 hours, check the smoker. Stir up the charcoal and add more if needed. Place the remaining soaked hardwood chunks on top of the charcoal.
    • If required, add more water to the water pan.
    • Close the smoker and continue smoking for another 5-6 hours. The low temperature ensures the turkey stays juicy and flavorful.
  5. Final Touches:

    • It’s almost impossible to overcook the turkey using this method, so no need to stress about timing. However, if the weather is very cold, adjust the cooking time accordingly.
    • The turkey is ready when the leg can be moved easily. Carve it immediately before serving for the juiciest results.

Additional Tips:

  • Wood Selection: Hickory wood is my go-to choice, but pecan or oak also work wonders.
  • Flavor Enhancements: Consider adding aromatic herbs or spices to the water pan for an extra layer of flavor. You can even experiment with adding beer or wine for a unique twist.
  • Safety Reminder: Smoking should always be done outdoors to avoid any health hazards associated with indoor smoking.
