Ingredients:

For Forcemeat Stuffing:

  • 1 goose liver (optional)
  • 2 cups breadcrumbs
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh rosemary
  • 2 onions
  • 6 apples
  • 1 pound ground pork
  • Salt and pepper to taste

  • 8 dessert apples

  • 5 cups cranberries
  • 16 ounces port wine

Instructions:

  1. Prepare Forcemeat Stuffing:

    • In a food processor, combine breadcrumbs and herbs. Pulse until finely chopped.
    • Add onions and apples to the mixture and pulse until finely chopped.
    • Add ground pork, goose liver (if using), salt, and pepper. Mix well.

  4. Roast the Goose:

    • Reduce the oven temperature to 350°F (175°C) and continue to cook for approximately 3 hours for a 12lb goose or 3 1/2 hours for a 14lb goose.
    • Remove excess fat from the tray every 30 minutes to use for roasting vegetables.

    • While the goose is cooking, prepare the gravy. If using giblets, make giblet stock. Otherwise, use canned chicken broth.
    • Once the goose is cooked, heat the cranberry jelly and brush it over the goose’s skin. Return the goose to the oven for a further 15 minutes.
    • Allow the goose to rest for 20-30 minutes before carving.
  6. Make the Gravy:

    • Drain off any remaining excess fat from the roasting tin.
    • Add wine and stock or broth to the remaining juices in the tin.
    • Scrape up the brown sticky bits and cook, reducing the mixture to a thin gravy consistency.
    • Season the gravy well with salt and pepper.
