Prepare the Meat: Begin by dividing the ground beef into three separate bowls. Two bowls should contain 360g each, and the third bowl should have 330g.

Form the First Two Patties:
Take one of the bowls with 360g of beef and season it with salt. Mix the beef using your hands until it’s well combined.
Place an 11 cm diameter ring mold on a square of parchment paper. Scoop out 180g of seasoned meat and press it into the mold. Use a meat mallet or the back of a spoon to achieve an even thickness. Once done, carefully remove the mold. Repeat the same process with the remaining beef to form the second patty. -
Add Fresh Herbs:
Finely chop the fresh sage, thyme, and rosemary using a sharp knife. Add them to the second 360g portion of beef. Season with salt and black pepper, and mix everything together with your hands until well combined. Form two more patties using the same technique with the ring mold and meat mallet. -
Incorporate the Cheese:
Grate the Edamer cheese using a coarse grater. Add the grated cheese to the bowl with the 330g of ground beef. Season the mixture with salt and pepper, then mix it by hand until the cheese is fully incorporated into the beef. Shape the mixture into two final patties using the same method as before. -
