  1. Proof the Yeast:
    Sprinkle the yeast and 1/2 teaspoon of sugar over warm water in a small bowl. Stir until the yeast is dissolved. Let it stand for about 15 minutes or until the mixture becomes bubbly.

  2. Prepare the Dough:
    In a medium bowl, combine 1 1/2 cups of flour and 1/4 teaspoon of salt. Stir in the yeast mixture and 1 tablespoon of olive oil until a smooth, soft dough forms.

  3. Knead the Dough:
    Place the dough on a lightly floured surface and flatten it slightly. To knead the dough, fold it in half toward you and press it away from you with the heels of your hands. Give the dough a 1/4 turn and continue folding, pushing, and turning until it becomes stiff and elastic, adding more flour as needed.

Flatten the dough into a circle on a lightly floured surface, then roll it out from the center to the edges into a 10-inch circle. Place the circle in a greased 12-inch pizza pan and stretch and pat the dough out to the edges of the pan. Cover and let it stand for 15 minutes.

  7. Preheat the Oven:
    Preheat the oven to 350°F (180°C).

  8. Prepare the Toppings:
    Cut the bell peppers into 3/4-inch pieces. Wipe the mushrooms clean with a damp kitchen towel and thinly slice them. Mix the mozzarella and Parmesan cheeses in a small bowl.

  9. Bake the Pizza:
    Spread the sauce evenly over the pizza dough and sprinkle with 2/3 of the cheese mixture. Bake in the preheated oven for 25 minutes. Then, remove the pizza from the oven and raise the oven temperature to 400°F (200°C). Arrange the bell peppers, olives, mushrooms, and chicken on top of the pizza, then sprinkle the remaining cheese on top. Bake at the new oven temperature for an additional 10 minutes or until the cheese is completely melted and the pizza looks done.
