Ingredients:
| Quantity | Ingredient |
|---|---|
| 3 | Plum tomatoes |
| 4 | Olive oil |
| 1 | Onion |
| 1/2 | Bell pepper |
| 1 | Celery |
| 1 | Carrot |
| 1 | Mushroom |
| 3 | Garlic cloves |
| 1/2 | tsp Salt |
| 1/2 | tsp Black pepper |
| 1 | tsp White sugar |
| 1/4 | tsp Crushed red pepper flakes |
| 1 | Bay leaf |
| 1 1/2 | tsp Dried oregano |
| 1 1/2 | tsp Dried basil |
| 1 | tsp Dried thyme |
| 1/2 | cup Red wine |
| 1 | Anchovy fillet |
Instructions:
-
Pour two cans of plum tomatoes into a large bowl and gently crush them with your hands, leaving some texture.
-
Puree the contents of the third can of tomatoes and add it to the bowl.
-
Dice the onion, bell pepper, celery, carrot, mushroom, and garlic cloves. Heat olive oil in a large, non-reactive pot over medium heat. Add the diced vegetables along with the bay leaf and sauté until they are just tender.
-
Stir in the salt, black pepper, white sugar, crushed red pepper flakes, dried oregano, dried basil, and dried thyme. Cook for about a minute to release the flavors.
-
Add the remaining ingredients: red wine and anchovy fillet. Stir well to combine.
-
Reduce the heat to low and let the sauce simmer uncovered for at least one hour, stirring occasionally to prevent sticking.
-
Once the sauce has thickened and the flavors have melded beautifully, remove the bay leaf before serving.
