Instructions:

  1. Prepare the Batter:

    • In a large mixing bowl, combine the flour, sugar, cinnamon, baking soda, and salt.
    • Add in the eggs, crushed pineapple (undrained), and mashed bananas. Mix until well combined.
  2. Bake the Cake:

    • Preheat your oven to 350°F (175°C).
    • Grease and flour three 9-inch round cake pans or a 9×13-inch rectangular pan.
    • Pour the batter evenly into the prepared pans.
    • Bake the round cake pans for approximately 30 minutes, or until a toothpick inserted into the center comes out clean.
    • If using a rectangular pan, bake for about 1 hour, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  3. Make the Cream Cheese Frosting:

    • In a separate mixing bowl, cream together the cream cheese and margarine until smooth.
    • Gradually add in the powdered sugar and vanilla extract, mixing until creamy and well combined.

    • Place one cake layer on a serving plate and spread a generous layer of cream cheese frosting over the top.
    • Repeat with the remaining cake layers, stacking them on top of each other and frosting between each layer.
    • Use the remaining frosting to cover the top and sides of the cake, creating a smooth and even finish.
  5. Serve and Enjoy:

    • Slice the Hummingbird Cake into generous portions and serve to delighted guests or eager family members.
    • Store any leftovers in an airtight container in the refrigerator for up to several days, although it’s unlikely there will be any left!
